Brew Bread with Cherries & Pecans - Large (1.5 lb loaf)

Ingredients: Enriched white and whole wheat flours, sugar, baking powder, salt, dried cherries and pecans.
Only requires addition of: 12 ounces of your favorite beer.

Our Brew Breads are defined as a QUICK BREAD--easy, fast and convenient. So fast, in fact, it takes longer to open the package than to mix. Simply add 12 ounces of your favorite beer. Any kind of beer will do - the darker the beer the darker the bread. The yeast in the beer makes the bread rise. Alcohol content bakes out, leaving only the flavor. The texture is not light like French or Italian bread, or heavy like some with many grains. Rather, more the texture of English muffin bread. The combination of fruits and nuts result in a moist, slightly sweet flavored bread that is not only scrumptious but nutritious. Absolutely delicious toasted with your favorite jam or jelly. BREW BREAD WITH CHERRIES & PECANS makes ordinary French toast extraordinary. Here's how: Spread softened cream cheese on four slices of bread. Spread any tart preserves on four more slices. Now assemble four sandwiches, pairing a cream cheese slice with a preserve slice. When spreading, have cream cheese and preserves come to within 1/2 inch of the edge of the bread. Refrigerate sandwiches for at least four hours, or overnight. When ready to cook, beat the following ingredients together in a mixing bowl: 2 eggs, 1/2 cup milk, 1/2 teaspoon cinnamon and 3 teaspoons sugar. Dip sandwiches into egg/milk mixture, coating both sides. Shake off excess and fry on lightly greased griddle until both sides are golden brown. Top with syrup and serve immediately. Serves four.

Hopi Blue Corn Meal Muffins with Pine Nuts

We love to roast fresh green chiles to serve alongside KATSINA CORN DUMPLINGS. The recipe for these roasted chiles is from KOKOPELLI'S COOKBOOK:
While wearing rubber gloves, puncture the entire length of long green chile peppers (Chimayo or New Mexico green chiles, Anaheim or California chiles) with the tip of a paring knife. Place chiles close together in a shallow baking pan and broil or roast on grill about 6 inches from the heat. When blistered and browned, turn over, using tongs. Each side should take 3 to 4 minutes. Place the chiles immediately in a tightly covered container (pan, paper or plastic bag) for 15 minutes. This steaming process will allow the skin to be removed easily. While wearing rubber gloves, leave the stem intact and using a sharp knife, slit the chiles from the stem end to the tip along the perforations. Carefully remove the skin, seeds and membranes. Remember to always keep hands away from the face, especially the eyes

Hopi Blue Popcorn

No, the popcorn DOESN'T pop in colors! This is the question most asked. Wish it did. You'll have success popping the conventional way in a little oil, or air-popping. Or try this easy method --- place 1/2 to 3/4 cup popcorn in a small paper bag. Roll down top of bag a couple of turns and microwave on high for 4 to 5 minutes. When popping slows down, remove. No need to add oil. For added flavor after popping, drizzle butter or margarine over popcorn, then mix together either one of the following seasonings and sprinkle over popcorn to taste.
1) 1 teaspoon salt, 1 teaspoon pure chile powder (mild or hot), 1/4 teaspoon ground oregano and 1/8 teaspoon ground cumin.
2) 1 teaspoon salt, 2 tablespoons parmesan cheese and 1/2 teaspoon paprika.
